A Quick, Nourishing Breakfast

We all know that it’s important to start the day with a healthy breakfast. However, if you’re like me, morning time can be rushed! At our house breakfast needs to be nourishing, realistic and quick. That is why I love making Apple, Almond Butter Overnight Oats! This recipe requires no cooking and I make multiple servings on Sunday, store them in the refrigerator and then they are ready to grab-and-go throughout the week. On mornings when we make smoothies for breakfast (which is another quick favorite), I’ll enjoy this recipe for lunch. Justin’s single serve nut butter squeeze packs are a great compliment this meal! They provide portion control and I can add the almond or peanut butter right top, when I’m ready to enjoy. I hope you love this recipe!
Apple Almond Butter Overnight Oats
Makes Two: 12-ounce servings
Ingredients:
1 cup rolled oats
2 cup unsweetened non-dairy milk (almond, hemp, coconut)
2 tablespoons of chia seeds
1⁄2 teaspoon ground cinnamon
1⁄2 teaspoon vanilla extract
Pinch of sea salt
2 tablespoons Justin’s almond butter
1 medium apple, chopped
Directions:
Add oats and almond milk into a large mixing bowl. Next, add in chia seeds, cinnamon and vanilla extract and stir everything together. Divide batter into two jars. Top with diced apples, a sprinkle of sea salt and a dollop of almond butter. Cover with lid and place in the refrigerator overnight. In the morning, they are ready to eat! No cooking or heating required. Enjoy!
TIP: To keep apple slices from browning, toss with a little citrus juice such as lemon. You can also add fresh apple slices and almond butter (or nut butter of choice) in the morning.
